I often feel like I am scurrying to play catch up. Making a healthy dinner after a busy day may feel a little daunting. Having a meal plan chock full of good recipes is a must, and including one or two one-pan recipes is a no-brainer.
My personal One Pan Meal Plan dishes are some of my favorite recipes. They might not all be haute culinary cuisine all of the time, but they can be healthy, delicious and – here’s the best part – really easy. Make your own plan, and follow along for more of my favorite one pan recipes.

Beef and Broccoli with Brown Rice
Serves 4
Heat 1 tbs. of oil in a large wok, or a large sauté pan.
Sear your onions, garlic and ginger until clear.
Add your beef tips and sear until just cooked, then set aside in a bowl.
Add the other 1 tbs. oil and heat, then add the fresh broccoli florets.
Cook on high heat, adding a little veggie stock and a little soy at a time, so the broccoli sears and steams at the same time.
Once the broccoli turns a dark green and becomes slightly tender, remove ONLY the broccoli, not the juice. You can just put it in the same bowl as the beef.
Add in the rest of your veggie stock and soy if you have any left. Bring to a low boil and begin stirring in your cornstarch a little at a time.
Once you have a thickened brown sauce, add everything else back in and cook on medium high until the sauce has infused all the ingredients.
Serve over the brown rice.
Pro-Tip:
I always cook a large batch of rice on Sunday nights to use throughout the week with quick dishes like this one. It is great way to cut a lengthy step out of the process for those busy week nights.
