Mother's Day brunch recipes

“Mother’s Day Brunch”

French Toast
Ingredient, Amount and Prices:
French or Sourdough bread 1 loaf, sliced $1.79
Whole eggs 4 to 6 each $1.59 for dozen
1% Milk 2 Tablespoons $1.59 for half gallon
Cinnamon 2 teaspoons
Vanilla extract 1 teaspoon
Total Cost $4.97

Directions:
In a large, flat bowl or platter, mix together eggs, milk, cinnamon and vanilla until all ingredients are thoroughly incorporated. Slice French bread and soak bread into egg mixture until both sides are coated. Heat a skillet on stovetop and cook French bread until both sides are thoroughly cooked.

Mini-Quiches
Ingredient, Amount and Prices:
Whole Eggs 6 to 8 each $1.59 per dozen
Crescent Rolls (optional) Small container $1.59
2% Cheddar Cheese ½ cup $2.00
Non-stick cooking spray
Total Cost $5.18

Directions:
Preheat oven to 350 degrees. If using crescent rolls, unroll the dough and cut out small square sections to put inside muffin pan. Create a “shell” for each quiche by placing the dough in each muffin space on the pan. Cook the shells for approximately 5 minutes or until barely gold in color. In a mixing bowl, beat together all eggs. Pour egg mixture into muffin pans. Sprinkle each quiche with cheddar cheese and other desired toppings. Cook for approximately 10 to 15 minutes, or until eggs are firm.

Fruit Kabobs with Yogurt Honey Drizzle
Ingredient, Amount and Prices:
Fresh Strawberries As desired $2.00 per carton
Fresh Blueberries As desired $3.99 per carton
Toothpicks 1 per kabob
Low Fat Vanilla Yogurt 1 (8 ounce) container $0.99
Honey 1 teaspoon
Total Cost $6.98

Directions:
Rinse fruit. Cut the stems from the strawberries and create the fruit kabobs using strawberries and blueberries. Mix together the honey and yogurt to create the dipping sauce.

Cran Citrus Spritzer
Ingredient, Amount and Prices:
Diet Lemon Lime Soda 8 ounces $1.50 for 2 liter
Cranberry Juice Approximately 1 ounce $1.25 for 20 oz bottle
Fresh Lime 1 wedge $0.50 each
Total Cost $3.25

Directions: Pour lemon lime soda into a glass. Add cranberry juice to soda. Squeeze the juice of a lime wedge into mixture and garnish with lime.
