Asian spiced lettuce wraps

ASIAN SPICED LETTUCE WRAPS

Sauce:
Mix following ingredients together until sugar dissolves
½ cup water
¼ cup sugar
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons ketchup
Juice of  ½ lime
Pepper flakes to taste
½ teaspoon sesame oil

Pork:
Brown  1 - 1 ½ lbs lean ground pork with
1 can chopped water chestnuts
4 chopped green onions (white and green parts)
1 teaspoon minced garlic
1 teaspoon minced ginger
Salt and pepper to taste
Drain off any fat after the meat has cooked through

Noodle Salad:
2 carrots peeled and rough chopped
1 cucumber peeled (seeded if desired) and chopped
2 packages Ramen noodles (discard seasoning pack)
¼ cup each basil, cilantro, and mint leaves chopped
1 tablespoon soy sauce
½ teaspoon sesame oil
1 Head of iceberg lettuce
¼ cup chopped peanuts (optional)
1 lime, quarter for garnish

Instructions:
Cook Ramen noodles as directed on package, but reduce cooking time to 2 ½ minutes Drain and mix with carrots, cucumber, herbs, soy sauce and sesame oil

Let everyone assemble their own wraps with lettuce leaves, pork mixture, sauce, noodle salad, peanuts and lime
