Tempura Lobster

Recipe from Syrah Restaurant and Wine Bar.

Ingredients:

1 cup flour
1 egg
Salt and pepper
12 oz bottle of beer
Lobster tail cut in half and removed from shell
Oil for frying

Directions:

Mix egg, flour, salt, pepper and beer until smooth and no flour clumps remain. Add flour if needed, should be the consistency of a gravy. Dip the lobster halves in batter letting excess drain off and carefully move to oil preheated to 350. Fry 3-5 minutes per side. Serve with dipping sauce of your choice.
