Healthy Chicken Stir-Fry

Ingredients:

1.5 pounds boneless/skinless chicken breast
4-pound bag stir-fry vegetables with seasoning pack
1 tablespoon vegetable oil
14 ounce box whole grain rice

Cooking Directions:

Cut chicken breast into 1/2 inch pieces. In large wok, heat oil over medium high heat. Sear off chicken breast, but do not cook all the way through. About one minute. Remove chicken from wok, set aside. Add bag of stir-fry vegetables to wok, cook for 5 minutes. Add chicken pieces and seasoning packet. Cook for additional 3-4 minutes, until hot. Cook rice as per instructions on box. Serve hot, enjoy!
